  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for the water bath)
  • Salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Wrap a 9-inch springform pan in tin foil and grease it.
  3. For the crust, mix graham crumbs, brown sugar, cinnamon, and melted butter; press into the pan.
  4. Toss sliced apples with brown sugar and cinnamon.
  5. Prepare crumble topping by mixing flour, brown sugar, oats, and melted butter until crumbly.
  6. Beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs gradually until blended.
  7. Layer half of the cheesecake batter on the crust; add half of the apple filling and crumble topping. Repeat layers.
  8. Place the springform pan in a water bath and bake for about 55 minutes or until set but slightly wobbly.
  9. Cool in the oven for an hour before refrigerating for at least four hours.
