  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat your oven to 400°F and grease a baking sheet with nonstick spray.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another large bowl, combine melted butter and sugar until mixed; then add egg, vanilla extract, and applesauce.
  4. Gradually add the dry ingredients to the wet mixture until just combined; gently fold in diced apples.
  5. Drop tablespoon-sized portions onto the prepared baking sheet spaced apart.
  6. Bake for about 10 minutes until golden brown; then broil for 2–4 minutes until glaze caramelizes.
  7. Prepare the glaze by whisking powdered sugar with apple cider/juice until pourable; brush over warm fritters.
