  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cucumber, diced

  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  2. While shrimp cooks, prepare the vegetables: dice the avocados and cucumber; halve the cherry tomatoes; chop the red onion and cilantro.
  3. In a mixing bowl, combine cooked shrimp with diced avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  4. Squeeze lime juice over the salad mixture. Drizzle with additional olive oil if desired and mix gently.
