Ingredients

  • 1/2 head of cauliflower (cut into bite-sized florets)
  • 2 cups panko breadcrumbs
  • 2 large eggs (whisked)
  • 2 tbsp water
  • 1/4 cup + 2 tbsp orange juice
  • 1/4 cup granulated sugar
  • 2 1/2 tbsp vinegar
  • 1/8 cup low-sodium soy sauce
  • 1 clove garlic (minced)
  • 1/4 tsp ginger (minced)
  • 1 tsp sriracha
  • 1 tsp ketchup
  • 2 tsp cornstarch + 2 tbsp water

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Whisk the eggs in one bowl. In a Ziploc bag, add panko breadcrumbs.
  3. Dip each cauliflower floret into the egg mixture, letting excess drip off, then place in the bag of breadcrumbs. Seal and shake until fully coated.
  4. Arrange coated florets on the prepared baking sheet and bake for 15-20 minutes or until golden brown and crispy.
  5. While baking, prepare the orange sauce by combining all sauce ingredients (except cornstarch) in a saucepan over medium heat until simmering. Mix cornstarch with water, add to the pot, stirring until thickened.
  6. Drizzle sauce over baked cauliflower before serving.
