  • Smoked brisket rub
  • Sourdough bread
  • Colby jack cheese
  • Provolone cheese

Instructions

  1. Prepare the brisket by trimming excess fat and applying mustard as a binder. Season generously with the rub and refrigerate for 1-2 hours.
  2. Smoke the brisket using a pellet smoker at 210°F for 9-10 hours until it reaches 165°F. Wrap in butcher paper and smoke again at 250°F until it hits 204°F.
  3. Allow the brisket to rest for 2-3 hours before slicing.
  4. Sauté diced onions with avocado oil, kosher salt, and butter until caramelized.
  5. Assemble the sandwich: layer sourdough with fried onions, sliced brisket, caramelized onions, cheeses, and BBQ sauce.
  6. Toast each sandwich in a cast iron skillet over medium heat until golden brown on both sides.
