  • 2.5 kg (5 lb) standing rib roast (bone-in)
  • 150g (10 tbsp) unsalted butter, softened
  • 5 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Salt and black pepper to taste
  • 1 head of garlic, halved
  • 1 onion, quartered
  • Fresh thyme and rosemary sprigs
  • Beef broth and dry red wine

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Let the rib roast sit at room temperature for 30 minutes.
  3. In a mixing bowl, combine softened butter with minced garlic, herbs, salt, and pepper; rub generously over the roast.
  4. Place onion and halved garlic in a roasting pan; top with herb sprigs.
  5. Set the roast on top of the aromatics; pour beef broth and red wine around it.
  6. Insert a meat thermometer into the thickest part of the roast.
  7. Roast for approximately 120 minutes or until desired doneness is reached (medium rare at about 130°F/54°C).
  8. Rest for 20 minutes before slicing.
