  • 1/2 cup brown sugar, packed (light or dark)
  • 1/4 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp. vanilla extract
  • 1 Tbsp. milk (optional)
  • 1 (10 oz.) bag peanut butter chips (~2 cups)
  • 1/4 cup granulated sugar
  • flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F and line cookie sheets with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream together the cold butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Add the egg, egg yolk, vanilla extract, and milk; mix well.
  5. Gradually incorporate the dry ingredients until combined.
  6. Fold in the peanut butter chips using a spatula.
  7. Scoop out dough portions onto prepared sheets and create a criss-cross pattern with a fork.
