  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 (15 oz) cans black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Gather and prepare all ingredients, rinsing the black beans and chopping vegetables.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions until soft.
  3. Add garlic powder, chili powder, paprika, cumin, salt, tomato, black beans, jalapeños, and hot sauce to the skillet. Stir to combine.
  4. Lay a burrito-sized tortilla on a cutting board and spoon the bean mixture into the center. Top with cheese, sour cream, romaine lettuce, optional avocado, then place a tostada on top.
  5. Fold the tortilla around the tostada tightly and place it seam-side down in a heated pan sprayed lightly with oil.
  6. Cook for 2–3 minutes until golden brown; flip and toast the other side for an additional 3 minutes.
