  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter
  • 8 slices sourdough bread

Instructions

  1. In a non-stick skillet, cook and crumble the sausage until browned; set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium heat and scramble the beaten eggs until just set.
  3. Combine cooked sausage and scrambled eggs in a bowl.
  4. Butter one side of each slice of bread. In the skillet, layer one slice of bread (butter side down), add cheese, then the egg-sausage mixture, followed by another slice of cheese and buttered bread (butter side up).
  5. Grill until golden brown on both sides. Repeat with remaining ingredients.
  6. Serve immediately.
