Ingredients

  • 2 cups cherry tomatoes
  • 1 Tablespoon olive oil
  • 2 Tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • ½ cup fresh chopped basil
  • 8 ounces fresh mozzarella (cut into chunks)
  • 8 ounces shredded provolone cheese
  • ¼ cup grated parmesan cheese
  • Kosher salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine whole cherry tomatoes, olive oil, basil pesto, minced garlic, salt, and pepper. Toss gently and roast for 15 minutes until soft.
  3. In a mixing bowl, mix sour cream and fresh basil. Fold in mozzarella, provolone, and parmesan.
  4. Once tomatoes are roasted, combine the cheese mixture with them. Top with halved cherry tomatoes.
  5. Bake for another 20 minutes until bubbly and golden.
  6. Garnish with fresh basil just before serving.
