Ingredients
- 1/2 cup butter (melted)
- 1 cup light brown sugar (packed)
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan by spraying it with non-stick spray or lining it with parchment paper.
- In a mixing bowl, combine melted butter and brown sugar until smooth. Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined. Fold in the shredded carrots gently.
- For the cream cheese layer, beat the cream cheese with granulated sugar until smooth. Then add the egg yolk and vanilla extract until well blended.
- Pour half of the carrot cake batter into the prepared pan, spread evenly, then dollop spoonfuls of cream cheese mixture on top. Pour remaining batter over it.
- Bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
