  • 1/2 cup butter (melted)
  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan by spraying it with non-stick spray or lining it with parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Add the egg and vanilla extract, mixing well.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined. Fold in the shredded carrots gently.
  4. For the cream cheese layer, beat the cream cheese with granulated sugar until smooth. Then add the egg yolk and vanilla extract until well blended.
  5. Pour half of the carrot cake batter into the prepared pan, spread evenly, then dollop spoonfuls of cream cheese mixture on top. Pour remaining batter over it.
  6. Bake for about 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before cutting into squares.
