  • 1 pound ribeye steak (thinly sliced)
  • 1 medium onion (sliced)
  • 1 bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Boil the tortellini according to package instructions until al dente; drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat, cook ribeye steak for 3-4 minutes until browned; remove from skillet.
  3. Sauté onion and bell pepper in the same skillet for about 5-6 minutes; add minced garlic and cook until fragrant.
  4. Pour in beef broth, bring to a simmer while scraping the skillet; let reduce for about 2-3 minutes.
  5. Lower heat, stir in heavy cream and allow sauce to thicken before adding provolone cheese until melted.
  6. Return steak to the skillet, add drained tortellini, mixing to coat well; cook together for an additional 2-3 minutes.
  7. Serve hot, garnished with chopped parsley.
