  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, add olive oil, ground beef, and diced onion. Cook until the beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in dry rice and return to boil.
  4. Cover with a lid and reduce heat to low; simmer for 15 minutes.
  5. Sprinkle shredded cheese on top; cover and cook for another 5 minutes until melted.
