  • 1 cup (200g) granulated sugar

  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups (350ml) heavy whipping cream, chilled
  • 8 oz (225g) semisweet chocolate, finely chopped
  • 3 tbsp (45ml) milk
  • 2 tbsp (25g) powdered sugar
  • 4 oz (115g) semisweet chocolate, finely chopped
  • 1/2 cup (120ml) heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Combine melted butter and granulated sugar in a mixing bowl. Mix in eggs and vanilla until well blended.
  3. In another bowl, whisk cocoa powder, flour, salt, and baking powder; gradually mix into wet ingredients.
  4. Pour batter into the prepared pan, spreading evenly. Bake for 25 minutes or until moist crumbs cling to a toothpick. Let cool completely.
  5. For the mousse, melt semisweet chocolate with milk over low heat; let cool slightly. Whip chilled heavy cream until soft peaks form; gently fold in cooled chocolate mixture.
  6. Spread mousse over cooled brownies and refrigerate for at least 3 hours before serving.
