  • 100g granulated sugar
  • 100g almond flour
  • 100g powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar (for filling)
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 300°F and line two baking sheets with parchment paper.
  2. In a double boiler, whisk egg whites and granulated sugar until frothy and sugar is dissolved. Transfer to a stand mixer and whip until stiff peaks form.
  3. Sift almond flour, cocoa powder, and powdered sugar together; fold into the meringue until combined.
  4. Pipe small circles onto prepared sheets and let rest for about 30 minutes.
  5. Bake for approximately 13 minutes; cool completely before removing from sheets.
  6. Beat together butter and peanut butter; add powdered sugar, vanilla, and salt until fluffy.
