  • 1/2 cup unsweetened Dutch-process cocoa powder
  • 2 tablespoons flour
  • 1/2 cup low-fat milk
  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar (for egg whites)
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for serving

Instructions

  1. Preheat oven to 375°F (190°C) and spray your baking dish with cooking spray.
  2. In a mixing bowl, whisk together powdered sugar, cocoa powder, and flour until blended.
  3. Combine low-fat milk and water in another bowl and gradually add to dry ingredients while stirring until smooth.
  4. In a clean bowl, beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks appear.
  5. Gently fold the whipped egg whites into the chocolate mixture in three parts.
  6. Add egg yolks and vanilla extract, folding gently until just combined.
  7. Pour batter into prepared baking dish and bake for about 20 minutes or until puffed and set in the center.
