Description

Ingredients

  • 2 medium Persian cucumbers
  • 2 medium carrots
  • red cabbage
  • 1 romaine lettuce (inner leaves only)
  • 1½ cups edamame beans
  • Handful fresh mint leaves
  • Handful cashew nuts
  • 2 tbsp white miso paste
  • 2 tbsp soy sauce or tamari
  • ½ lemon or lime (juiced)
  • 1 tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • ½ tsp grated ginger
  • 4 tbsp extra virgin olive oil

Instructions

  1. Chop the cucumbers, carrots, cabbage, and romaine into uniform pieces and place them in a large mixing bowl.
  2. Add the edamame beans and torn mint leaves to the bowl for added freshness.
  3. In a mason jar or bowl, combine miso paste, soy sauce, lemon juice, rice wine vinegar, sesame oil, grated ginger, and olive oil. Shake or whisk until smooth.
  4. Pour the dressing over the salad and toss well to coat all ingredients evenly. Top with cashews before serving for an added crunch.
