- ½ cup chopped fresh cilantro
- 3 cloves garlic (minced)
- ½ small shallot (or red onion)
- 1 tbsp sugar
- 1 tsp curry powder
- ½ tbsp chili powder (optional)
- ¼ cup olive oil
- 1.5 – 2 tbsp vegetarian mushroom oyster sauce
- 1 tbsp dark soy sauce
- 2 tbsp lime juice
Instructions
- Cook the dry noodles according to package instructions until slightly undercooked; rinse under cold water.
- In a heatproof bowl, combine cilantro, garlic, shallot, curry powder, sugar, and optional chili powder.
- Heat oil in the pot over medium heat for about 3-4 minutes until hot; test with garlic.
- Pour hot oil over the seasoning mixture in the bowl and mix well.
- Stir in mushroom oyster sauce, soy sauce, and lime juice until combined.
- Add the cooked noodles to the sauce mixture; toss gently to coat.
- Serve warm, garnished with chili oil or additional chili sauce if desired.
