  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup regular or gluten free all purpose flour
  • 1 cup old fashioned rolled oats
  • 4 tbsp melted vegan butter (for cinnamon swirl)
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon (for cinnamon swirl)
  • 3/4 cup powdered sugar (for cream cheese glaze)
  • 2 tbsp melted vegan butter (for cream cheese glaze)
  • 2 oz softened vegan cream cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until smooth.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats.
  4. Gradually add dry ingredients to wet ingredients; stir until just combined.
  5. Grease a loaf pan and pour in half of the batter.
  6. Mix melted vegan butter, brown sugar, and cinnamon for the swirl; drizzle half over the batter then top with remaining batter.
  7. Swirl with a knife and drizzle remaining mixture on top.
  8. Bake for 45 minutes or until a toothpick comes out clean.
  9. Cool before drizzling with glaze made from powdered sugar, melted vegan butter, and softened vegan cream cheese.
