Ingredients
- 1 pound salmon fillets (or your favorite fish)
- ⅓ cup olive oil
- 1 red bell pepper (sliced)
- 1 serrano pepper (or jalapenos, sliced)
- ½ cup chopped cilantro
- 2 carrots (sliced)
- 6 garlic cloves (halved)
- 1 tablespoon tomato paste
- sweet paprika

Instructions
- Heat olive oil in a large sauté pan over medium heat. Sauté red bell pepper, serrano pepper, carrots, and garlic for 2-3 minutes.
- Add tomato paste and spices; stir and cook for another 2-3 minutes.
- Pour in water and half of the cilantro; cover and simmer for 12-15 minutes until veggies are tender.
- Season salmon fillets with salt; place them in the pan and spoon sauce over them.
- Cover and cook on low heat for 20-25 minutes, basting with sauce halfway through cooking.
- Serve garnished with lemon slices and remaining cilantro.
