  • 2 tablespoons ginger (chopped)
  • 1 tablespoon turmeric
  • 2 teaspoons sea salt
  • 1 cup dried brown lentils
  • 15 ounces coconut milk
  • Cherry tomatoes and cilantro for garnish

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat. Toast cumin and coriander seeds until fragrant, about 45 seconds. Add garlic and brown for 2 minutes.
  2. Stir in crushed tomatoes, ginger, turmeric, and salt. Cook for about 5 minutes.
