  • 1/4 cup lemon juice (from 2 large lemons)
  • 1 tbsp lemon zest
  • 2 cups fresh raspberries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1/2 tsp lemon zest (for topping)
  • 1/2 cup unsalted butter (room temperature, for topping)

  3. Mix in the eggs, sour cream, and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture until just combined.
  5. Stir in the lemon juice and zest gently.
  6. Pour the batter into the prepared pan and evenly distribute fresh raspberries over the top.
  7. For the crumb topping, mix flour, sugar, lemon zest, and butter until crumbly; sprinkle over raspberries.
