  • ½ tablespoon chickpea flour

  • Olive oil for frying
  • ⅓ cup runny tahini
  • 4 tablespoons lemon juice
  • 12 cloves garlic
  • Sea salt to taste
  • Water to thin
  • Fresh parsley, minced
  • Squeeze of lemon

Instructions

  1. Soak the lentils overnight and rinse them thoroughly.
  2. In a food processor, combine soaked lentils, diced onion, minced garlic, tomato paste, chickpea flour, Italian seasoning, salt, and pepper. Pulse until slightly chunky.
  3. Form small patties from the mixture and place on parchment paper.
  4. Heat olive oil in a frying pan over medium heat. Cook patties in batches for about 3-4 minutes on each side until golden brown.
  5. For the dip, mix tahini, lemon juice, minced garlic, sea salt, and water to desired consistency; stir in fresh parsley.
