Ingredients
- 2 servings dry instant ramen noodles (about 140 g)
- 10 oz extra firm tofu or veggies/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional for color)
- 2–3 tbsp corn starch
- 1–3 tbsp sugar or liquid sweetener
- 2 tbsp rice vinegar or lemon juice
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- 2 cloves garlic (minced, optional)
- Chopped scallions (for topping)
- Sesame seeds (for topping)
Instructions
- Prepare the sauce by mixing all sauce ingredients in a bowl; set aside.
- Boil water in a pot and cook the ramen noodles for about 2–3 minutes less than package instructions. Drain and rinse.
- In a non-stick pan, sauté chosen veggies/tofu until cooked.
- Add the sauce to the pan and simmer for 2–3 minutes until it thickens slightly.
- Mix in drained noodles and cook together for about 3 minutes until well combined.
- Garnish with sesame seeds and chopped scallions before serving.
