  • 1 cup fresh blueberries
  • 1/3 cup cream cheese, softened
  • Zest of 1 lemon
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Dough: Combine flour, water, and starter in a bowl. Rest for 30 minutes; then add salt and knead. Let rest for 4-6 hours with stretch-and-folds every 30 minutes.
  2. Make the Filling: Mix cream cheese, lemon zest, and sugar until smooth.
  3. Incorporate Blueberries: Gently fold blueberries into the dough during the final stretch-and-fold.
  4. Shape the Dough: Spread dough on a floured surface, top with filling, and roll tightly.
  5. Final Rise: Place seam-side up in a banneton; cover and refrigerate for 8-12 hours.
  6. Bake: Preheat oven with Dutch oven at 250°C. Bake covered for 20 minutes, then uncovered at 220°C for another 20-25 minutes.
