  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • ⅓ cup crumbled feta cheese
  • Fresh parsley, chopped for garnish
  • Salt to taste

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix until well combined.
  2. Form the mixture into meatballs (1½ to 2-inch in size).
  3. Heat olive oil in a skillet over medium heat and sear the meatballs for about 3–4 minutes per side until browned.
  4. Cover and cook for an additional 5–6 minutes until cooked through.
  5. In the same skillet, bring chicken broth to a boil and add orzo; cook for about 8–10 minutes until tender.
  6. Stir in lemon juice and olive oil into the cooked orzo before serving it topped with meatballs and garnished with crumbled feta and parsley.
