- 24 oz salmon (cut into 4 portions)
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 1 tsp olive oil
- 2 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup sun-dried tomatoes
- 1/2 cup fresh grated parmesan cheese
- Salt and black pepper to taste

Instructions
- Preheat a nonstick pan over medium heat.
- Cut salmon into four portions and cook skin-side down with olive oil for about 5 minutes until golden brown. Flip and cook for another 5 minutes until cooked through.
- In a bowl, whisk milk and cornstarch until smooth. In the same pan, melt butter and sauté garlic until fragrant.
- Pour in the milk mixture, stirring until thickened. Add spinach, cherry tomatoes, and sun-dried tomatoes; cook until spinach wilts.
- Toss in cooked pasta and salmon gently to combine.
