Ingredients

  • 2 medium English cucumbers (about 4 cups), diced
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 small red onion, thinly sliced
  • 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • juice of 1/2 lemon
  • salt & pepper

Instructions

  1. In a large mixing bowl, combine diced cucumbers, chickpeas, feta cheese, red onion, garlic, and fresh herbs.
  2. In a small bowl or directly in the mixing bowl, whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper until well combined.
  3. Pour dressing over the salad ingredients and gently toss to combine. Taste and adjust seasoning if needed.
  4. Serve immediately or store in an airtight container in the refrigerator for up to four days.
