Ingredients

  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 4 celery stalks (chopped)
  • 4 whole carrots (peeled and chopped)
  • 1/2 onion (diced)
  • 2 cups egg noodles
  • 1 teaspoon minced garlic
  • 1/4 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Bay Leaves
  • 2 cups water

Instructions

  1. In a large stock pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onions.
  2. Bring to a boil; then reduce heat to low and cover.
  3. Cook until chicken reaches an internal temperature of 165°F (about 20–30 minutes).
  4. Remove chicken, shred it with two forks, and return it to the pot.
  5. Stir in thyme leaves, minced garlic, salt, pepper, bay leaves, egg noodles, and water.
  6. Cook over medium-high heat for about 10 minutes until noodles are tender.
  7. Remove bay leaves before serving warm.
