  • 2 mini sweet peppers, seeded and chopped
  • 1 cup shredded Irish cheese (e.g., Dubliner)
  • 1/4 cup light mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons sweet pickle relish
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon spicy brown mustard
  • About 1.5 tablespoons finely chopped mixed fresh herbs (tarragon, thyme, basil)

Instructions

  1. Thaw the frozen peas in a large mixing bowl with cool water while preparing other ingredients.
  2. Soak the chopped onions in water for about 15 minutes to mellow their flavor. Drain both peas and onions thoroughly.
  3. Return drained peas and onions to the mixing bowl, then add all remaining salad ingredients. Toss gently to combine.
  4. In the bowl used for soaking onions, mix dressing ingredients together before pouring over the salad mixture. Fold gently until well-coated.
  5. Cover the salad and refrigerate until chilled before serving.
