Ingredients
- 12 whole graham crackers
- 2 tablespoons granulated sugar
- 8 tablespoons butter (melted)
- 1 box (3.4 oz) instant lemon pudding
- 1½ cups half-and-half
- 8 ounces cream cheese (softened)
- ½ cup powdered sugar
- 16 ounces Cool Whip (thawed)
- 1 can (21 oz) blueberry pie filling
Instructions
- Prepare the crust by processing graham crackers and sugar in a food processor until fine crumbs form. Add melted butter and mix until coated. Press into the bottom of a 9×13 baking pan and freeze for 20 minutes.
- In a medium bowl, whisk together instant lemon pudding and half-and-half until thickened.
- In a large bowl, beat cream cheese and powdered sugar until smooth. Add the lemon pudding mixture and blend until combined.
- Gently fold in half of the Cool Whip until mixed.
