  • 1/4 cup butter (cold and cubed, for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream butter and sugar until fluffy. Mix in lemon zest, eggs, and vanilla.
  3. In another bowl, whisk flour, salt, baking powder, and baking soda. Gradually combine with the wet mixture.
  4. Scoop dough onto prepared sheets and create thumbprint indentations.
  5. For the filling, cook lemon juice, egg yolks, sugar, corn starch, and zest over medium heat until thickened; stir in butter.
  6. Fill each cookie indentation with lemon curd and bake for about 10 minutes or until lightly golden.
