  • 1 cup dried red kidney beans
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 1 cup long white grain rice

Instructions

  1. Soak the kidney beans overnight, then drain.
  2. In a large pot, heat oil over medium heat and brown the sliced vegan sausage.
  3. Add diced onion, celery, and bell pepper; cook until onions are translucent.
  4. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, garlic, and drained beans.
  5. Season with black pepper and optional apple cider vinegar; bring to a simmer.
  6. Cover and cook on medium heat for 1 to 1½ hours until beans are tender.
  7. Meanwhile, cook rice according to package directions.
  8. Mash some beans against the pot sides to thicken the stew before serving.
