  • 3 large eggs
  • 1 egg yolk
  • 1/2 cup unsalted butter (melted)
  • 2 tsp pure vanilla extract
  • 1/2 cup oil (canola or vegetable)
  • 3/4 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 TBSP cornstarch
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup marshmallow crème

Instructions

  1. Preheat your oven to 325°F. Spray a 9×9-inch baking pan with nonstick spray. Line the bottom and two sides of the pan with parchment paper, then spray again.
  2. In a medium bowl, sift together the flour, cocoa powder, cornstarch, and salt. Set this mixture aside.
  3. Using a mixer with a whisk attachment, beat together the sugar, eggs, and egg yolk on high speed for about five minutes until it becomes pale in color. While mixing, melt the butter in the microwave and allow it to cool slightly.
  4. Add oil, melted butter, and vanilla extract into the egg mixture. Mix on low until thoroughly combined. Gradually add the dry ingredients until just combined. Gently fold in the chocolate chips using a rubber spatula.
  5. Pour the brownie batter into your prepared baking pan. Melt the marshmallow fluff in the microwave for about 20–30 seconds until it’s easier to work with. Use a teaspoon to dollop marshmallow fluff on top of brownie batter. Lightly swirl it using a butter knife.
  6. Bake in your preheated oven for about 45–55 minutes. Check for doneness by inserting a toothpick; it should come out slightly wet but not with too much batter clinging to it. If needed, bake an additional five minutes.
  7. Allow your brownies to cool completely on a cooling rack before cutting them into squares and serving.
