  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp fine salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder, sifted
  • 1/2 cup powdered sugar
  • 1/2 cup dark chocolate chips, chopped
  • 1/2 tsp fine salt
  • 2 large eggs, room temperature
  • 1/4 cup vegetable or canola oil
  • 1/4 cup unsalted butter, melted
  • 2 Tbsp water
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/2 cup heavy whipping cream, room temperature
  • 2/3 cup dark chocolate chips (60-65% cocoa)
  • 2 Tbsp unsalted butter, room temperature
  • 1 Tbsp light corn syrup (optional)
  • flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Prepare the shortbread crust by melting sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt in a saucepan. Mix with flour and press into the pan.
  3. Bake for 15 minutes until golden; allow cooling.
  4. For the brownie batter, cream butter and sugar, then add eggs, oil, and vanilla. Combine dry ingredients separately and fold into the wet mixture.
  5. Pour brownie batter over the cooled crust and bake for about 25 minutes.
  6. Prepare ganache by heating cream and mixing in dark chocolate chips until smooth; pour over warm brownies.
  7. Let cool completely before cutting into squares.
