Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat together the softened cream cheese and powdered sugar until light and creamy (about 2–3 minutes).
- Mix in the pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until fully combined. Then add the remaining cup of graham cracker crumbs.
- Cover the mixture and refrigerate for at least 30 minutes to firm up.
- Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of dough and roll into balls; place on the prepared sheet.
- Refrigerate again for another 30 minutes while you melt the white chocolate chips in intervals in a microwave-safe bowl until smooth.
- Dip each chilled ball into melted chocolate, letting excess drip off before placing them back on the sheet.
- Drizzle any leftover chocolate over each ball and optionally sprinkle with extra graham cracker crumbs.
- Chill once more for about 20–30 minutes before serving.
