  • 2 cups heavy cream
  • 6 cups sugar (divided)
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1 1/2 cups chopped walnuts or pecans

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until liquefied (about 20 minutes).
  3. In a large saucepan, combine the remaining 4 cups of sugar with the heavy cream and simmer on low heat until blended.
  4. Pour the melted sugar into the cream mixture, stirring continuously.
  5. Increase the heat to medium and cook until reaching 244°F (softball stage).
  6. Remove from heat and stir in baking soda until fully combined.
  7. Mix in unsalted butter and vanilla extract until smooth.
  8. Allow the mixture to rest for about 20 minutes before adding chopped nuts.
  9. Transfer to the prepared baking dish and cool for at least 1-2 hours before slicing into squares.
