  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1618 small flour tortillas
  • 1 tbsp olive oil
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 teaspoon cumin
  • 1/4 tsp salt
  • 3 tbsp sour cream
  • 1/3 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 3 green onions (minced)
  • 2 tbsp cilantro (minced)
  • 1 lime (juiced)
  • 1/2 cup sour cream (for serving)
  • 1 tbsp cilantro (minced, for serving)
  • 1/2 lime (juiced, for serving)
  • 1/4 tsp garlic powder (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with olive oil and spices; bake for 20-25 minutes until cooked through. Shred the chicken.
  2. Increase oven temperature to 425°F (218°C). In a bowl, mix softened cream cheese with sour cream, salsa, spices, green onions, cilantro, lime juice, cheeses, and shredded chicken.
  3. Fill each tortilla with a few tablespoons of the mixture; roll tightly and place seam-side down on a parchment-lined baking sheet.
  4. Bake for 15-20 minutes until golden brown. Allow to cool slightly before serving.
