  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Scoop about 2 tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
  7. Add about 1 teaspoon of jelly in the center of each disc.
  8. Cover each filled disc with another flattened dough disc and seal the edges.
  9. Bake for approximately 12-15 minutes or until golden brown around the edges.
  10. Allow cooling on the baking sheet for about 5 minutes before transferring to a wire rack.
