  • 1/4 cup heavy cream
  • 1/2 teaspoon salt (for salted caramel)
  • 8 oz cream cheese, room temperature
  • 8 oz butter, room temperature
  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 7 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and grease three 8-inch cake pans.
  2. In a large bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually blend dry ingredients into wet mixture until just combined.
  5. Pour batter evenly into prepared pans and bake for 25–30 minutes; cool completely before frosting.
  6. Prepare cream cheese frosting by beating butter and cream cheese until fluffy; gradually add powdered sugar and salt.
  7. Assemble the cake by layering frosting between cooled layers and on the outside.
