Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
- 2 tablespoons butter (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, herbs, orange zest and juice, honey, soy sauce, salt, and pepper.
- Dry the chicken with paper towels; rub the marinade all over and inside.
- Place quartered onion inside the cavity; put chicken in a roasting pan.
- Pour chicken broth around the chicken; roast for about 1 hour and 15 minutes until internal temperature reaches 165°F (75°C).
- Baste every 20 minutes for added moisture.
- Let rest for 10-15 minutes before carving.
