  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, herbs, orange zest and juice, honey, soy sauce, salt, and pepper.
  3. Dry the chicken with paper towels; rub the marinade all over and inside.
  4. Place quartered onion inside the cavity; put chicken in a roasting pan.
  5. Pour chicken broth around the chicken; roast for about 1 hour and 15 minutes until internal temperature reaches 165°F (75°C).
  6. Baste every 20 minutes for added moisture.
  7. Let rest for 10-15 minutes before carving.
