- 1/2 cup (100g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 4 oz (115g) cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) thick caramel sauce (homemade or store-bought)
- Flaky sea salt, for sprinkling
Instructions
- Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla in a bowl until smooth. Transfer to a piping bag and refrigerate for 15 minutes.
- For the cookie dough, whisk together flour, baking soda, baking powder, and salt in one bowl. In another bowl, cream softened butter with both sugars until fluffy, then add egg and vanilla.
- Gradually incorporate dry ingredients until just combined.
