  • 1 tablespoon rice vinegar (optional, for added flavor)
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds (optional)

Instructions

  1. In a mixing bowl, combine olive oil with smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Toss in the shrimp until evenly coated.
  2. Heat a skillet over medium heat and cook the shrimp for about 2–3 minutes per side or until pink and opaque. Remove from heat.
  3. In another bowl, whisk together mayonnaise, sriracha, and lime juice to create the spicy mayo.
  4. To assemble, place rice in serving bowls and top with shrimp, carrots, avocado, cucumber slices, and drizzle with spicy mayo.
