  • 2 heaping cups mini marshmallows (about 3.5 ounces)

Instructions

  1. Preheat the oven to 350°F. Prepare an 8×8 inch baking pan with nonstick spray or grease it lightly, lining it with parchment paper.
  2. In a food processor, blend graham crackers with sugar until crumbly. Pulse in melted butter until evenly coated. Press this mixture firmly into the prepared pan.
  3. Bake the crust for 15-20 minutes until golden brown. Let it cool slightly.
  4. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla extract until smooth. Gradually mix in cocoa powder, flour, salt, and baking powder until combined; fold in chocolate chips.
  5. Pour brownie batter over the cooled crust and spread evenly. Bake for 30-40 minutes until set.
