  • ¼ cup milk (warmed to 110℉)
  • 1 ½ teaspoons instant yeast
  • 2 cups + 1 Tablespoon all-purpose flour
  • 200 grams sourdough discard (unfed)
  • 1 egg (beaten)
  • Fresh herbs (parsley or rosemary)
  • Garlic powder
  • Unsalted butter

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Mix on low speed and gradually add melted butter until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 3-4 minutes until smooth.
  3. Place the dough in a greased bowl and cover with plastic wrap; let it rise for 60-90 minutes until doubled in size.
  4. Prepare the topping by mixing softened butter, herbs, garlic powder, and salt in a bowl.
  5. Divide risen dough into 12 pieces. Flatten each piece and spread with the butter mixture before folding them in half and placing in a greased loaf pan.
  6. Let rise again for 30-45 minutes before preheating the oven to 350℉.
  7. Bake for 30 minutes; cover with foil and bake an additional 5-10 minutes until golden brown.
  8. Brush warm bread with remaining butter mixture and sprinkle with flaky sea salt before serving.
