  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 small red bell pepper
  • 1 jalapeño
  • 1 cup black beans (drained and rinsed)
  • 4 large tortillas
  • ¾ cup corn kernels
  • ¼ cup cotija cheese
  • Chipotle crema (made from sour cream and chipotle peppers)

Instructions

  1. Marinate diced chicken in lime juice, spices, olive oil, and chipotle pepper for at least 15 minutes.
  2. Cook rice according to package instructions while the chicken marinates.
  3. Sauté marinated chicken in a skillet over medium heat until cooked through (about 12–15 minutes).
  4. In the same skillet, sauté sliced veggies until tender and add cooked chicken back to warm through.
  5. Assemble wraps by layering rice, chicken, veggies, beans, corn, cheese, and drizzle with chipotle crema.
  6. Roll each wrap tightly and serve immediately.
