Ingredients
- 1 block extra firm tofu
- 1 batch cilantro lime rice
- 1 can black beans
- 1 red pepper
- 1 orange pepper
- 1 avocado
- 2 tablespoons sriracha
- 1 tablespoon olive oil
- 3 tablespoons corn starch or arrowroot starch
- 1–2 teaspoons coconut sugar or brown sugar
- 1 teaspoon paprika
- 1.5 teaspoons garlic powder
- 1 teaspoon onion powder
- 0.25 teaspoon chili powder
- 0.5–1 teaspoon salt
- 1 batch spicy tahini dressing
Instructions
- Preheat the oven to 400°F (200°C).
- Press the tofu between towels with a weight for 5-10 minutes.
- Mix dry ingredients (coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, salt).
- Cube the tofu and coat it with olive oil and sriracha.
- Toss the cubed tofu in the spice mixture until evenly coated.
- Arrange tofu on a baking sheet lined with parchment paper along with sliced peppers drizzled in olive oil.
- Bake for 20 minutes; brush remaining sriracha on tofu and bake an additional 10-15 minutes until crispy.
- Assemble your bowl with rice, black beans, roasted peppers, baked tofu, sliced avocado, and tahini dressing.
