  • 8 oz Orzo Pasta
  • 1 tablespoon Olive Oil
  • 8 oz Sliced Mushrooms
  • 3 cloves Minced Garlic
  • 4 cups Baby Spinach
  • 1/4 cup Grated Parmesan Cheese
  • Salt and Black Pepper to taste
  • Optional: Red Pepper Flakes, Fresh Parsley

Instructions

  1. Cook orzo according to package instructions until al dente; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and sauté for 5–7 minutes until browned.
  3. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
  4. Add baby spinach to the skillet and cook for 2–3 minutes until wilted.
  5. Toss the cooked orzo into the skillet and mix well to combine.
  6. Remove from heat, sprinkle grated Parmesan cheese over the mixture, and season with salt and pepper.
  7. Garnish with red pepper flakes and parsley if desired, then serve warm.
