  • 2 cups finely diced onion
  • 1 cup finely diced carrot
  • 1 cup finely diced celery
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 11/2 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes
  • 11/2 cups green split peas (rinsed)
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone

Instructions

  1. In a large heavy-bottomed pot, heat olive oil over medium heat. Add onions, carrots, celery, salt, and pepper; cook until softened (5–8 minutes). Stir in garlic and spices.
  2. Add split peas, ham bone, and chicken broth. Bring to a boil; reduce heat to low and simmer uncovered for 60–90 minutes or until peas are tender.
  3. Remove the ham bone, shred off meat, and return to the soup. Optionally blend part of the soup for creaminess.
  4. Serve hot with fresh herbs and crusty bread.
