  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces crushed Nacho Cheese Doritos

Instructions

  1. Cook rotini according to package directions; drain and rinse with cold water.
  2. In a skillet, brown ground beef over medium heat, drain grease, and add taco seasoning with water; cook until liquid evaporates.
  3. In a large mixing bowl, combine cooked rotini, seasoned beef, black beans, corn, cherry tomatoes, and cheese.
  4. Whisk together Catalina dressing and sour cream; pour over pasta mixture and stir gently to coat.
